La Cubana, a Utah-based authentic Cuban food truck and catering service, has received a $1,000 grant from Cyprus Credit Union. The award was issued in partnership with the Women’s Business Center of Utah, an organization that provides tools, resources, and guidance to empower women-owned businesses throughout the state.
Owned and founded by Christina Rojas, La Cubana utilizes family recipes passed down from her mother. The menu includes items such as Cuban sandwiches, lechon, ropa vieja, moros cristianos, pastelitos, croquetas, and fresh Cuban coffee.
Rojas describes the business as a legacy project that honors her family and culture through food. Beyond her culinary work, Rojas has been involved in community service, including feeding unhoused communities and partnering with local charities. In 2019, she was recognized as part of the 100 Strong Women of Utah by photographer Nico Santos for her leadership and community impact.
