Lehi continues to see new restaurants and shops open to serve its expanding population, with notable additions in the Traverse Mountain and west Lehi areas over the past year.
New Ice Cream Shop Opening
Brooker's Founding Flavors Ice Cream held its grand opening on April 18, 2026, at 1712 W Traverse Parkway in Lehi, adjacent to Harmons grocery store. The location offers super-premium ice cream with flavors themed around American founding figures and operates daily with extended evening hours.
West Lehi Retail Expansion
In West Lehi, developer Gardner announced in March 2025 the opening of several new tenants across View 21 and Cold Spring Retail developments. These include Bonchon, Thirst, Snelgrove’s Ice Cream, Little Caesars, Wingstop, Lehi Nails and Spa, and Children’s Art Center classes. The additions added roughly 13,000 square feet of retail space and cater to residents in Lehi along with nearby Saratoga Springs, Eagle Mountain, and Bluffdale. Gardner noted the expansion helps address retail demand in an area where population is projected to rise 18% over the next five years.
Recent Local Food Openings
Other recent openings include Edna's Market & Grille at 380 N 850 E, Porch Coffee, and F’kosh bakery, which have appeared in local "new" or "best new" roundups. A Utah bagel shop and Guzzle Soda Shack also held grand openings in Lehi in spring 2026.
Upcoming Large-Scale Development Projects
Larger-scale projects are in progress. CenterCal Properties and Perry Commercial broke ground in May 20 6 on The Collective at Morning Vista, a 134,000-square-foot shopping and dining center anchored by Whole Foods Market at Timpanogos Highway and Morning Vista Road in the Silicon Slopes corridor. The project is targeted to open around 2028. A new Smith's Marketplace is under construction at 2100 North and 3600 West with an expected fall 2026 opening, and The Shops at Sky View development will bring Target and Life Time as anchors.
City Economic Growth and Resources
Lehi City’s Economic Development department maintains resources for businesses, including online licensing applications, but does not publish a public list of recent permit approvals. Utah County handles licensing only for unincorporated areas. The city’s rapid commercial growth aligns with housing expansion, particularly around Traverse Mountain, though specific data on traffic impacts from new retail remains limited in available reports.
