Founded in 2017 by Utah couple Austin and Courtney Archibald, Rebel Creamery makes low-carb, keto-friendly ice cream. The Midway-based brand originally launched as a successful Kickstarter campaign that raised roughly $80,000, according to Rebel’s website.
