The senior center started all 14 games for the Cougars as a junior in 2025, serving as the anchor for an offensive line that achieved several national rankings. According to BYU, the unit helped the offense rank in the top 25 for ten different offensive statistics in 2025, including No. 9 in time of possession, No. 12 in rushing first downs, and No. 12 in fewest sacks allowed. Mitchell's versatility has been a hallmark of his career at BYU. While he has played on the offensive line for several seasons, he also played defensive tackle during his 2022 and 2023 seasons. As a high school standout for South Summit, Mitchell helped the team secure back-to-back 2A state championships in 2017 and 2018. His high school career included a varsity stint where his team went 33-3, and he personally recorded 76 tackles and 13.0 tackles for loss as a senior.
